Sizing is a gelatin based substance used in the making of watercolor paper, canvas stretching and panel preparation. Sizing slows the absorbtion of the paint so that most of the pigment remains on the surface of the paper. Can maintain the structural integrity of the paper, the paper can be soaked with water without falling apart; reduces paper buckling and warping once dry; encourages paper to shrink back to it's original shape.
